Best Baked Chicken

This is a super easy recipe that is a favorite of my boyfriends AND my kids. I usually serve it with steamed Broccoli and Au Gratin potatoes, but it can really be served with whatever you like!

Best Baked Chicken (that's really what it's called, LOL)

4-8 skinless, boneless chicken breast halves
1 cup sour cream
2 tablespoons fresh lemon juice
2 teaspoons soy sauce
2 teaspoons garlic powder

1 dash pepper
1 Package of Stove Top CORNBREAD stuffing mix (beat until it's crumbs)

1/2 cup butter, melted

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking dish.
In a medium bowl, mix the sour cream, lemon juice, soy sauce, garlic powder, and pepper. Dip each chicken breast in the sour cream mixture, then roll in the stuffing mix to coat. Arrange chicken in the prepared baking dish. Drizzle with the melted butter.
Bake 40 to 50 minutes in the preheated oven, until the chicken is no longer pink and the juices run clear.

Slow Cooker Pork Roast

I decided to add this one today since I'm literally sitting here eating the leftovers and I'm reminded again how awesome this is. Our house is a full one, and last night this dinner was made for 8 of us, 5 being kids, and EVERYONE loved it. The kids were actually fighting over the last carrot!

I did tweak it a bit by adding the carrots. I also served it with egg noodles and used the broth from the pork on the noodles to add flavor. I also steamed some asparagus to go on the side and of course served some crescent rolls. The crescent rolls are a favorite it our house.


Just so everyone knows, I'm not claiming all of these recipes as my own, I'm merely using this blog to feature recipes that my family, friends and I have enjoyed. It might save you the time of tirelessly searching recipe sites for good stuff, only to try it and find out it really sucks! Anything I post here is something I've had success with :-) The original recipe can be found on all recipes.com under tangy pork roast, but the one below is the one with my changes.


Ingredients

1 large onion, sliced
1 bag baby carrots
2 1/2 pounds boneless pork loin roast
1 cup hot water
1/4 cup white sugar
3 tablespoons red wine vinegar
2 tablespoons soy sauce
1 tablespoon ketchup
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon garlic powder
1 dash hot pepper sauce, or to taste

Directions

Arrange onion slices evenly over the bottom of the slow cooker, and then place the roast on top of the onion. Place the baby carrots in the crock pot around the edges of the pork loin. In a bowl, mix together water, sugar, vinegar, soy sauce, ketchup, black pepper, salt, garlic powder, and hot sauce; pour over roast.
Cover, and cook on Low for 6 to 8 hours, or on High for 3 to 4 hours.

*Tip - the longer you cook it the more it falls apart! I usually do mine for about 9 hours on low.

Chicken Enchilada Dip

This recipe is a must have. It's become my signature recipe. People know me by it. If they hear I'm coming to a get together, they ask if I'm bringing "The Dip". If you want to "WOW" the group, make this! It's not very expensive to do and it's insanely easy.

Chicken Enchilada Dip


Ingredients:

A large container of sour cream (24 oz)
bag of shredded sharp cheddar cheese (16oz) (use all but about a 1/4 of the bag)
2 packages of cream cheese (softened)
2 packages of perdue shortcuts chicken (southwest style) (cut into small cubes)
green onions (as many as you want, I like a lot of onion) I think I use one bunch, diced
1 jar of sliced jalepenos (you'll use about 1/2 of the jar), diced

Blend all together very well and put into a casserole to bake. Top with the remaining cheddar cheese.

Bake on 400 for about 20 min. I don't have an exact time to be honest, I just watch it. When it's bubbly on the edges and all the cheese on top is melted its done. You can always test a part out of the center to see if its done. (

Recipes for Mom's

I'm a mom of two boys and I've found in the past 5 years I've been cooking for them, that it takes lots of planning and organization, and also a pretty decent file of recipes that please everyone. My kids are very good eaters, so I'm lucky there, but sometimes I find that it's hard to cook something that we will all enjoy.

Sometimes it's hard to find that happy medium between chicken nuggts and tator tots and Shrimp Scampi. I've built up quite a collection of go-to favorites that I'd like to share, and I'm sure along the way I will find even more things to add.
